Roasted Sweet Potatoes

I could live off sweet potatoes. They are sweet… they are potatoes…and they are complemented best with a slab of butter and a sprinkle of salt, and peppered with… well pepper.

What's not to love about any of that?

Fried, mashed, chipped, or candied… Anyway you've got them, I want them… But my most preferred way, is roasted…

It couldn't be more simple.

Peel them 
cube them 
coat them with olive oil
season with salt and pepper
throw in greased pyrex dish
roast at 425* for 25 minutes or until tender.

  1. Throw in a tad bit of parmasen cheese for a bit of extra flavor! We are having my recipe tonight! (I make sticks though!)
