Fried, mashed, chipped, or candied… Anyway you've got them, I want them… But my most preferred way, is roasted…
Peel them
cube them
coat them with olive oil
season with salt and pepper
throw in greased pyrex dish
roast at 425* for 25 minutes or until tender.
Enjoy!
Throw in a tad bit of parmasen cheese for a bit of extra flavor! We are having my recipe tonight! (I make sticks though!)
