Apple Chicken Sausage Veggie Bake

I was having one of those days where I found myself standing in front of the refrigerator wondering what I was going to cook for supper, at an hour I should have already had supper cooked.

We needed groceries and the produce I did have, needed to be used in a hurry.

This recipe started as a chuck all, but has ended up being a sought after go to.

The simplicity of this recipes is ridiculous, the deliciousness of this recipe is extreme, and to bring it all the goodness to a full trifecta…… it's fool proof!

and healthy…

wait, what would that make it then? a quart-fecta?



















Apple Chicken Sausage Veggie Bake

Peal and Chunk Dice
-5 yukon gold potatoes {you can substitute spaghetti squash for potatoes too}

Chunk Dice
-2 bell peppers
-1 onion
-5 gloves of garlic
-2 carrots

Slice
-1 package of Apple Chicken Sausage

Throw everything in large bowl.

Melt
-3 Tablespoons Coconut oil {or any only you prefer}

Drizzle oil over sausage veggie mix
Season with salt & pepper
Toss with hands until coated

Transfer to 9x13 baking dish

Cover with tin foil tightly.

Bake 400* for 30-40 minutes {or until potatoes are tender}

Uncover and cook additional 5-10 minutes

That's it…. seriously… now make it and….
